The Fungus Among Us

Some molds are good like penicillin. Others, especially on items with a high water content, corn, corn products, walnuts, pecans, grains and milk produced by cows that have ingested moldy feed may contain mycotoxins. This is a naturally occurring chemical intoxication in food, meaning that they could be “Pathogenic” organisms (disease causing) as opposed to “Spoilage”. Many mycotoxins are heat resistant and not destroyed by cooking. Make sure to inspect fresh produce and other food for mold growth before consumption. Making an executive decision whether to cut away the mold or discarding the product relies on what it is. Hard cheeses cut away, peanut butter toss out.

Grocery store produce departments need to observe the condition of the product they are offering for sale and cull it when it has expired or is an “off condition”.
