Chiboust, one of Tarrytown's restaurant treasures, was opened by Jill Rose in early 2004 on Main Street across from the Tarrytown Music Hall. Years ago, I chose it as the most romantic dining destination in Westchester County.

A long time has passed since Jill Rose learned how to fresh-squeeze lemonade and sell it at stands at local fairs while still in high school. She earned two degrees from the Culinary Institute of America in Hyde Park; cooked for an Indy racing car team and its followers as the drivers competed across America; and was a pastry chef at Lespinasse and La Caravelle.

She also taught in the Culinary Arts Program of The Bronx based Women's Housing and Economic Development Corporation.

Today, Jill is battling Triple Negative Breast Cancer (TNBC) and a fundraiser campaign is underway to help pay the costs for Jill to attend a cancer facility. The goal is to raise $100,000.

The online fundraising website relates:

"At age 49 Jill was diagnosed with Stage 3 breast cancer. She endured four cycles of chemotherapy followed by surgery: a double mastectomy and removal of 23 lymph nodes. The surgery was followed by eight more cycles of chemotherapy followed by eight weeks of radiation. She finished treatment by Thanksgiving and gave thanks with friends and family."

"The next month Jill found out that the cancer had spread to her liver and that she was now diagnosed with TNBC – Triple Negative Breast Cancer – a very aggressive form of breast cancer with the worst outcomes. Now she faces more surgery and more chemotherapy."

"Jill wants to live – she has plans for the future – her work in the world is not over. She has so much to give. She wants to go to a facility to be thoroughly evaluated and advised about using food (her passion and her knowledge) to keep her cancer from spreading."
